Delicious Baked Chicken Burritos filled with shredded chicken, rice, and beans, topped with a creamy green chile cheese sauce.

- 2 cups cooked, shredded chicken
- 1 cup cooked rice
- 1 can black beans
- 1 cup green chile salsa
- 1 cup shredded cheese
- 8 large tortillas
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the shredded chicken, rice, black beans, green chile salsa, cumin, and paprika.
- In a skillet, heat the tortillas with a little olive oil over medium heat until soft.
- Place 1/4 cup of the mixture in the center of each tortilla, roll them up tightly, and seal the ends.
- Place the burritos in a baking dish, top with shredded cheese, and bake for 15-20 minutes until the cheese is bubbly and golden.
Notes
For a vegetarian option, substitute chicken with tofu or tempeh. You can also customize the filling with additional vegetables.
