Description

Delicious Baked Chicken Burritos filled with shredded chicken, rice, and beans, topped with a creamy green chile cheese sauce.


Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1 cup cooked rice
  • 1 can black beans
  • 1 cup green chile salsa
  • 1 cup shredded cheese
  • 8 large tortillas
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the shredded chicken, rice, black beans, green chile salsa, cumin, and paprika.
  3. In a skillet, heat the tortillas with a little olive oil over medium heat until soft.
  4. Place 1/4 cup of the mixture in the center of each tortilla, roll them up tightly, and seal the ends.
  5. Place the burritos in a baking dish, top with shredded cheese, and bake for 15-20 minutes until the cheese is bubbly and golden.

Notes

For a vegetarian option, substitute chicken with tofu or tempeh. You can also customize the filling with additional vegetables.
