Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 piece fresh ginger, peeled and chopped
  • 6 cups vegetable broth
  • 2 cups rice noodles
  • 1 carrot, sliced
  • 1 cup mushrooms, sliced
  • Salt and pepper to taste
  • Chopped scallions for garnish

Instructions

  1. Prepare your ingredients: chop the onion, garlic, and ginger.
  2. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, sauté until fragrant, about 5-7 minutes.
  3. Add vegetable broth to the pot and bring to a boil over high heat.
  4. Once boiling, reduce heat. Add rice noodles, carrot, and mushrooms. Simmer for 5-7 minutes until noodles are tender.
  5. Season with salt and pepper to taste. Serve hot in bowls, garnishing with chopped scallions.
