- 1 onion, chopped
- 4 cloves garlic, minced
- 1 piece fresh ginger, peeled and chopped
- 6 cups vegetable broth
- 2 cups rice noodles
- 1 carrot, sliced
- 1 cup mushrooms, sliced
- Salt and pepper to taste
- Chopped scallions for garnish
Instructions
- Prepare your ingredients: chop the onion, garlic, and ginger.
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, sauté until fragrant, about 5-7 minutes.
- Add vegetable broth to the pot and bring to a boil over high heat.
- Once boiling, reduce heat. Add rice noodles, carrot, and mushrooms. Simmer for 5-7 minutes until noodles are tender.
- Season with salt and pepper to taste. Serve hot in bowls, garnishing with chopped scallions.
Notes
